Next Course Dates
Due to the COVID 19 crisis we are facing, we have taken the decision to remove all dates for the Biltong & Jerky Making Workshops. We will review on a regular basis, however at this moment in time, feel we may if we are lucky, manage a course in potentially May ( if we take an optimistic view) and then again in September. However we'll keep you updated when things become more clear.
Announcement - 2 new true South African Style Biltong flavours available now
We are really pleased to let you all know that we have developed with the close support of our friends and partners in London a true South African style Biltong. Some people may know it as 'dirty' style Biltong - Yes it contains British Beef, Yes its only Silverside Beef, and for these products, unfortunately , Yes it contains allergens - notably from Worcestershire and Soy sauce ( Barley Fish & Soy). Initial feedback has been amazing - A perfect snack for beer drinkers!
Guild of Fine Food - Great Taste Award Winner - Our Red Wine & Rosemary Jerky
Suffice to say, we are really pleased with our new winner this year - Our Red Wine & Rosemary has just received a 1 gold star review - What the judges said...... Very agreeable aroma, with the red wine and Rosemary easily identifiable and very lovely. Good thickness to the pieces and still malleable. The flavours come through well, and keep going as you chew through. The meat breaks up well in the mouth without becoming a chore, and we agreed with the term "full bodied". This is well conceived and produced, and a really good example of its type

2018 has started off exceptionally well for us all at BigHorn HQ.... Our first few courses have been received very well by our participants and all have enjoyed he additional beer pairing sessions with Pershore Brewery. We have a few extra spaces now only avialble in March and June, so if you are thinking of booking these for presents for someone, or even yourself, get too it quickly! Well we’ve had a busy first quarter of the year and it doesn’t seem like 2 minutes since we last wrote an update and yet that was almost 3 months ago! So what have we been up to? – Well suffice to say, we’ve kept ourselves busy in making Biltong – the new flavour has been warmly received and will be available at our Food Festivals and Farmers’ Markets. Talking of new flavours we are in the process of testing a new flavour – something hot and spicy and a little bit different, more details closer to launch date! Looking for a Day Out for a birthday or Fathers’ Day Gift idea? - Our Biltong & Jerky Classes are proving very popular now, we were fully booked for January, February and March. April is now almost full for a only a couple of spaces left for May – After May, we will bring a halt to the courses and then start again in September. We are looking forward to starting in earnest the Food Festival circuit again, Chester was great fun, unfortunately a little wet, but didn’t deter the families on a bank holiday weekend. We’ll be tweeting about where we are in due course….. We have chosen to use beef from Great Berwick Organics who having met on a number of occasions, ticked all the right boxes for us in terms of livestock management, free range lifestyle, no antibiotics and full traceability.
